Tangy yogurt and fragrant curry powder mingle to make a cool and creamy dressing for tender chickpeas in this flavorful vegetarian sandwich. Adding diced apples lends the combo the perfect amount of sweetness and crunch, while a flurry of fresh herbs finishes it off.


  1. Check 1 10.5-ounce can chickpeas, drained and rinsed
  2. Check 1 tablespoon plain Greek yogurt
  3. Check 1 teaspoon mild curry powder
  4. Check teaspoon kosher salt
  5. Check teaspoon freshly ground pepper
  6. Check ½ apple, unpeeled and cut into ¼"-cubes
  7. Check 2 6-inch hoagie rolls or split-top hot dog buns
  8. Check 2 basil leaves, shredded
  9. Check 2 mint leaves, shredded


  1. Combine the chickpeas, yogurt, curry powder, salt, and pepper in a medium bowl, stirring until chickpeas are evenly coated. Stir in the apple. Spoon mixture into rolls and garnish with mint and basil.
  2. Wrap sandwiches tightly with plastic film or wax paper if you are packing them, or serve immediately.
