- 2 English cucumbers, peeled and chopped (about 4 cups)
- 1 cup fresh mint leaves
- 1/4 cup gin
- 3/4 cup fresh lime juice
- 1/2 cup light agave nectar
- Pinch of salt
- Puree the cucumber, mint, gin, lime juice, agave, and salt in a blender until smooth.
- Pour the mixture into 10 3-ounce or 8 4-ounce ice pop molds, dividing evenly. Insert ice-pop sticks and freeze until firm, at least 8 hours or overnight.
