Sometimes a warm, hearty bowl of soup is only 30 minutes and 10 ingredients away. Here, a mixture of sliced cabbage and onion, and chopped potatoes and carrots simmer in vegetable broth for a healthy, satisfying meal. Stirring in vinegar at the end of cooking adds brightness, and a dollop of sour cream adds richness. Serve it with fresh, crusty bread for dunking. Ingredients ¼ cup olive oil 6 cups sliced green cabbage (from 1 small head cabbage) 1 medium sweet onion, sliced (about 2¼ cups) 2 pounds Yukon Gold potatoes (about 8 medium potatoes), peeled and chopped 3 medium carrots, chopped (about 1½ cups) 6 cups vegetable broth 2 teaspoons kosher salt, divided 2 tablespoons white wine vinegar ¾ cup sour cream 1 tablespoon chopped fresh dill Directions Heat oil in a large pot over medium-high. Add cabbage and onion. Cook, stirring occasionally, until starting to wilt and brown in spots, 8 to 10 minutes. Add potatoes, carrots, broth, and 1 teaspoon salt; bring to a boil. Reduce heat to medium-low and simmer, uncovered, stirring occasionally, until potatoes and carrots are tender, about 20 minutes. Remove pot from heat. Stir in vinegar and remaining 1 teaspoon salt; stir in sour cream. Sprinkle with dill.
