How to Make It

Step 1

Make the dressing: Combine 2 tablespoons olive oil, lime juice, cumin seeds in a small bowl. Season with salt and pepper.

Step 2

Toast the pita bread, then brush it with the remaining olive oil. Tear the bread into pieces and, in a large bowl, toss it with the corn kernels, cherry tomatoes, radishes, cucumbers and the dressing. Serve topped with torn fresh mint.
