I tried this, a little unsure how we would like it, but it was a huge it! So easy and really good when it is 115 degrees outside
it was alright. Not so fond of it. Also didn't realize (though now I'll never forget) that I was supposed to use gloves to peel the jalapenos....my hands burned for the day.
We made this for dinner this week and it turned out really good! The cucumbers have a nice mild flavor and the jalapeno, basil and lime add a great zestiness. I used only one jalapeno to cut down on some of the spice for the kids.
I made this last night (with homegrown cucumbers and basil) and it was excellent! I did not use jalapenos and used less basil than what it called for. The flavors blended together really well. Topped with feta cheese and diced tomatoes.
