How to Make It
Step 1
In a large skillet, heat the oil, soy sauce, and half the seasoning packet over medium heat. Add the chicken and cook, turning occasionally, until beginning to brown, 2 to 3 minutes.
Step 2
Add the pepper, onion, and carrot and cook, stirring occasionally, until the vegetables are tender and the chicken is cooked through, 3 to 4 minutes.
Step 3
Meanwhile, cook the noodles according to the package directions; drain. Toss with the chicken and vegetables.

I've made this a few times,and it has become a family favourite. My daughter is heading off to university, and has already said she plans to take the recipe with her. It is easy, and flexible, depending on what meat and vegetables you have on hand. My only concern is the sodium and msg in the seasoning packet, so I use less than half what the recipe calls for, and use more onion.
