This refreshing cherry gin rickey works as a cocktail as well as a delightful, non-alcoholic beverage. (Just skip the gin!) Making syrup and straining the cherries allows for full extraction of cherry flavor and a clear, not cloudy, libation. 

Ingredients

  • 1 cup pitted sour cherries

  • ½ cup granulated sugar

  • ½ cup water

  • teaspoon kosher salt

  • ½ cup fresh lime juice (from 4 limes)

  • ½ cup lemon-lime soft drink (such as Sprite)

  • 4 ounces gin

  • Lime slices, for garnish

Directions

  1. Bring cherries, sugar, water, and salt to a boil in a small saucepan over medium-high. Cook, stirring occasionally, until slightly thickened, 6 to 8 minutes. Cool completely, about 1 hour. Pour mixture through a fine wire-mesh strainer into a bowl; discard solids.

  2. Stir together cherry syrup, lime juice, soft drink, and gin in a small pitcher. Pour evenly into 4 rocks glasses filled with crushed ice. Garnish with lime slices.
