How to Make It
Preheat the oven to 450° F. Line a rimmed baking sheet with parchment paper. In a large mixing bowl, combine the cauliflower rice, mozzarella, egg, garlic powder, and oregano. Stir until well combined.
Transfer the mixture to the prepared baking sheet and flatten into a rectangle. Brush lightly with olive oil and bake until golden brown and crispy at the edges, about 18-20 minutes.
Allow the crust to cool slightly, then spread with hummus and top with artichoke hearts, radishes, feta cheese, and parsley. Season with freshly ground black pepper. Slice into six pieces, and serve warm.
