How to Make It

Step 1

Stir together sugar, butter, and salt in a medium saucepan. Bring to a boil over medium, stirring often. Cook, stirring often, until mixture turns amber, 10 to 12 minutes. Slowly add cream to sugar mixture, stirring constantly (mixture will bubble); return to a boil. Cook, stirring often, until mixture is smooth and thick, 4 to 5 minutes. Pour sauce through a fine wire-mesh strainer into a bowl; discard solids. Stir in vanilla. Cool completely, about 1 hour. (Mixture with thicken as it cools.)
