A ripe cantaloupe can shine on it’s own, sure, but this recipe is a straight up celebration of how delicious summer-sweet melon can be. It’s all about the layers of flavor here. The base layer is a creamy schmear of honey-spiked mascarpone. Then, you’ll dial up the melon’s natural sweetness with a little sugar and a dash of lime juice to bring some zing. A sprinkle of pistachios to top seals the deal with a hit of salt to unite the whole thing into something much greater than the sum of its parts.

  • Stir together mascarpone and honey in a bowl and until smooth. Spread mixture on a platter.

  • Toss together cantaloupe, sugar, and 1 tablespoon of the lime juice in a large bowl; let stand 5 minutes. Arrange cantaloupe mixture on top of mascarpone mixture on platter.

  • Sprinkle cantaloupe mixture with lime zest and pistachios. Drizzle with remaining 2 tablespoons lime juice. Serve immediately, or cover and refrigerate up to 4 hours.
