- 1 large onion, sliced into 1/2-inch-thick rounds
- 1 tablespoon olive oil
- 2 teaspoons Cajun or blackening spice mix
- Heat grill to medium-high. Brush both sides of the onion rounds with the olive oil and sprinkle with the Cajun mix. Grill until blackened and tender, 5 to 6 minutes per side.
