Broccoli-Cheddar Grilled Cheese

This gooey grilled cheese is loaded with lemon-garlic broccoli and two kinds of cheese.

Calling all cheese-pull lovers! This grilled cheese has not one, but two kinds of melty cheese. Fontina's creamy and mild flavor is balanced by sharp, bold cheddar. Together, this is the perfect duo to envelop the lemon-garlic broccoli filling. The secret for the crispiest grilled cheese is to coat the outer bread with a bit of mayonnaise before searing. Take your meal to the next level by sprinkling a pinch of flaky sea salt on each sandwich before serving.

Ingredients

  • 2 tablespoons olive oil

  • 4 cups chopped broccoli florets (from 1 large head broccoli)

  • 1 teaspoon lemon zest (from 1 lemon)

  • .50 teaspoon kosher salt

  • .50 teaspoon freshly ground black pepper

  • .50 teaspoon garlic powder

  • 8 1/2-in.-thick slices rustic bread

  • ¼ cup mayonnaise

  • 4 ounces sharp Cheddar cheese, shredded (about 1 cup)

  • 4 ounces Fontina cheese, shredded (about 1 cup)

Directions

  1. Heat oil in a large high-sided skillet over medium-high. Add broccoli; cook, stirring occasionally, until charred in spots and crisp-tender, about 8 minutes. Remove skillet from heat and transfer broccoli to a small bowl. Stir lemon zest, salt, pepper, and garlic powder into bowl with broccoli. Wipe skillet clean.

  2. Spread 1 side of each bread slice with mayonnaise. Place 4 slices mayonnaise side down and top with Cheddar. Top Cheddar with broccoli mixture; top broccoli mixture with fontina. Top fontina with remaining 4 bread slices, mayonnaise side up.

  3. Return skillet to medium heat. Place 2 sandwiches in skillet; cook, flipping once, until cheese is melted and bread is golden brown, 3 to 4 minutes per side. Repeat with remaining sandwiches.
