Together, this is the perfect duo to envelop the lemon-garlic broccoli filling. The secret for the crispiest grilled cheese is to coat the outer bread with a bit of mayonnaise before searing. Take your meal to the next level by sprinkling a pinch of flaky sea salt on each sandwich before serving. Ingredients 2 tablespoons olive oil 4 cups chopped broccoli florets (from 1 large head broccoli) 1 teaspoon lemon zest (from 1 lemon) .50 teaspoon kosher salt .50 teaspoon freshly ground black pepper .50 teaspoon garlic powder 8 1/2-in.-thick slices rustic bread ¼ cup mayonnaise 4 ounces sharp Cheddar cheese, shredded (about 1 cup) 4 ounces Fontina cheese, shredded (about 1 cup) Directions Heat oil in a large high-sided skillet over medium-high. Add broccoli; cook, stirring occasionally, until charred in spots and crisp-tender, about 8 minutes. Remove skillet from heat and transfer broccoli to a small bowl. Stir lemon zest, salt, pepper, and garlic powder into bowl with broccoli. Wipe skillet clean. Spread 1 side of each bread slice with mayonnaise. Place 4 slices mayonnaise side down and top with Cheddar. Top Cheddar with broccoli mixture; top broccoli mixture with fontina. Top fontina with remaining 4 bread slices, mayonnaise side up. Return skillet to medium heat. Place 2 sandwiches in skillet; cook, flipping once, until cheese is melted and bread is golden brown, 3 to 4 minutes per side. Repeat with remaining sandwiches.
