The best kind of healthy recipe is one that sounds good, tastes great, and is actually healthy. You might think this is standard, but not so. Enter this healthy and delicious black rice bowl. The black rice is rich in the antioxidant anthocyanin, a plant pigment that gives it (and blueberries) a rich, deep color. Along with other antioxidants, anthocyanin may help protect our bodies from disease by combating free radicals. Tahini adds protein and a nutty taste, and raspberries offer sweetness and are yet another source of fiber. Why all this talk of fiber? Well, it’s the key to a meal will keep you full for hours (aka not reaching for a snack after an hour or two). The rice keeps well if you make it ahead, but wait to add the tahini until just before eating, otherwise the grains will soak up all the flavor and sauciness.
