Bitter Orange Crostata
Anna Williams
How to Make It
Step 1
Heat oven to 375° F.
Step 2
In a large bowl, combine the flour, sugar, baking powder, and 1/4 teaspoon salt. Add the butter pieces and blend with your fingertips until the mixture is crumbly.
Step 3
Add the egg yolks and knead just until the dough comes together. Form the dough into a disk. Cover with plastic wrap and refrigerate for 15 minutes.
Step 4
Using your fingertips, evenly press 2/3 of the dough into a buttered 10-inch pie plate. Spread the marmalade evenly over the top.
Step 5
Roll the remaining dough into six 1/2-inch-wide strips and place them in a crisscross pattern over the marmalade. Bake until lightly golden, 40 minutes.

OMG! It looks as if the pillsbury dough boy has exploded in my oven. I followed this recipe and did everything as they said and POOF! goes the dough. It's still baking but I'm thinking I wasted everything making this. I have NO idea what it takes like but looks horrible baking! :(

The fluted edge of the crust in the picture... itlooks as if this was not made in a tart pan, not a 10-inch pie plate. Although it happens frequently these days, it's not good when the picture does not match the recipe directions. A 10-inch pie plate would yield a much deeper result. Tell us what pan this dish was really made in. Food photography should not trump the recipe. In a more shallow pan, like a tart pan, as this seems to be, the baking time, and maybe even the amount of filling, would be different.

I wonder if you could switch out the marmalade for a different flavor or a preserve...

OMG!! Yummy. Like a gigantic sugar cookie. Made it with blood orange jam instead of marmalade. Kid's loved it. Crust burned on edges, and the dough on the bottom of crust was too thick- but oh so good. I might use 3/4 the dough for this recipe next time. Beautiful presentation with the crisscross pattern. Easy recipe- I will make it again!!!
