How to Make It
Gently mix together bison, onion, mustard, salt, pepper, and thyme in a large bowl. Shape into 4 ½-inch- thick patties. Heat oil in a large nonstick skillet over medium-high. Add patties and cook until well browned, about 3 minutes per side for medium rare.
Serve burgers on buns with tomato, avocado, onion, and lettuce, pea shoots, or microgreens.
