Barley tastes great with all the same mix-ins as oatmeal, be it cinnamon and brown sugar or fresh fruit and nuts. It also re-heats wonderfully when warmed with a splash of milk.

  • Place the barley, 3 cups water, and a pinch of salt in a medium saucepan and bring to a boil. Cover the pot and reduce heat and simmer, stirring occasionally, until the barley is tender and the water is absorbed, 25 to 30 minutes.

  • Meanwhile, combine the berries, orange juice, orange zest, chia seeds, and honey in a small saucepan over medium heat. Simmer for 10 minutes, until the berries have burst and the juices begin to thicken.

  • Divide the barley evenly amongst four bowls. Top each bowl with ¼ cup warmed milk, ¼ cup compote, and 1 tablespoon almonds.
