How to Make It
Cook bacon in a large pot over medium, stirring occasionally, until crisp, 5 to 7 minutes. Transfer to a plate using a slotted spoon.
Add onion and garlic to pot. Cook, stirring often, until softened, 6 to 8 minutes.
Add potatoes, broth, milk, salt, and pepper. Bring to a boil; reduce heat and simmer until potatoes are very soft and soup is slightly thickened, 30 to 40 minutes.
Serve topped with cheese, chives, and bacon.
How the kids can help:
- Hearty soups make a great base for kid-friendly toppings. Have kids fill little dishes with all the fixings and then customize their bowls.
- Give kids ownership of specific recipe steps: seasoning with salt and pepper right at the stove or snipping chives for garnish with safety scissors.
- Let kids suggest their own creative toppings. Try roasted broccoli and sour cream or yogurt. Experiment with different cheeses, chopped red onions, or bell peppers.
