This potato soup recipe is studded with bacon and toppings such as cheese and chives, making you feel like it's actually a baked potato soup. Hearty soups (hint: this potato soup recipe!) make a great base for creative toppings. Fill little dishes with all the fixings and then let your family customize their own bowls. In addition to the traditional toppings, roasted broccoli and sour cream or yogurt are delicious in this potato soup, as well.

How to Make It

Step 1

Cook bacon in a large pot over medium, stirring occasionally, until crisp, 5 to 7 minutes. Transfer to a plate using a slotted spoon.

Step 2

Add onion and garlic to pot. Cook, stirring often, until softened, 6 to 8 minutes.

Step 3

Add potatoes, broth, milk, salt, and pepper. Bring to a boil; reduce heat and simmer until potatoes are very soft and soup is slightly thickened, 30 to 40 minutes.

Step 4

Serve topped with cheese, chives, and bacon.
