Dips don’t have to be over-the-top decadent to be delicious, as proved by this fresh take on marinated artichoke dip. This easy recipe packs in tons of flavor, but in a much lighter package than usual. Greek yogurt takes the place of the standard mayonnaise, cream cheese, and sour cream; a little bit of olive oil adds richness. While the dip comes together quickly, the longer it marinates, the more the artichoke flavor shines through, making this a great dip to prep ahead for Super Bowl spreads or pre-dinner snacks.

How to Make It

Step 1

Mix yogurt, artichoke hearts, parsley, oil, lemon zest and juice, salt, and pepper in a large bowl until well combined.

Step 2

Transfer to a serving bowl and top with parsley. Serve dip with pita, crackers, or vegetables.
