I just opted out of using wine (we didn't have any). The recipe still worked out just fine.
How can I make this more colourful and tone down that heat of the red pepper. Seems like it needs additional flavour.
Chicken broth would be just fine. I've used it many times when I didn't have white wine on hand.
The Parmesan cheese is yummy on this … I substituted Thai Kitchen Red Curry Paste (not sauce) instead of the red pepper and it was glorious.

False. All the alcohol does not cook out of the sauce. See here: http://www.ochef.com/165.htm I bet you could use chicken or seafood stock instead of wine.
The alcohol is cooked out of the sauce. Just flavor left.
i liked this one a lot. added halved cherry tomatoes as well. yum!
