Italian Aperol is a less bitter and more fruity aperitif than Campari. It's fruity notes and vibrant orange hue make it look captivating in an ice-filled glass with bubbly prosecco and a splash of club soda. In this surprising version, a spoonful of olive brine adds punchy flavor that beautifully balances out both the bitterness and sweetness of the Aperol. The brine and the pimiento-stuffed olive garnish also give off subtle martini vibes, perfect for a classic cocktail-loving guest that's finally ready to dip their toes into the wonderful world of spritzes. One sip and you'll agree that this zippy drink should be on the menu all summer long.
