No need to worry, Parmesan, garlic, and Dijon are still in the game to really drive home the Caesar vibes. You'll drizzle the creamy, nutty dressing over salad greens, crispy roasted broccolini and chickpeas, and chunky homemade croutons to ensure that this salad is a satisfying one you'll want to repeat again and again. Pro tip: pat dry the chickpeas before roasting for extra crispiness. Ingredients 1 lb broccolini, trimmed 1 15.5-oz.can chickpeas, drained, rinsed, and patted dry 6 tablespoons olive oil, divided 1 1/4 teaspoon kosher salt, divided 1 8-oz. loaf rustic or sourdough bread, torn into bite-size pieces (about 4 cups) 1 oz. parmesan cheese, grated (about 1/4 cup), plusshaved cheese for garnish 1/4 cup tahini 3 tablespoons fresh lemon juice (from 2 lemons) 1 teaspoon dijon mustard 1/4 teaspoon grated garlic (from 1 clove) 5 oz. spring mix salad Directions Preheat oven to 450°F. Toss together broccolini, chickpeas, 3 tablespoons oil, and 1/2 teaspoon salt on a large rimmed baking sheet. Roast until lightly browned, about 10 minutes. Toss together bread, 1/4 teaspoon salt, and remaining 3 tablespoonsoil in a medium bowl. Remove baking sheet from oven and top broccolini mixture withbread mixture. Roast until broccolini is well browned, chickpeas arecrisp, and bread is toasted and crisp, about 15 minutes. Let coolfor 10 minutes. Meanwhile, whisk cheese, tahini, lemon juice, 3 tablespoons water, mustard, garlic, and remaining 1/2 teaspoon salt in a small bowl until creamy. Toss together roasted broccolini mixture, salad greens, and tahini dressing in a large bowl. Garnish with shaved cheese.
