Scott Mencken’s Famous Guacamole

Ingredients

  • 4 avocados, cut into 1/2-inch pieces
  • 2 plum tomatoes, seeded and chopped
  • 1 cup fresh cilantro, chopped
  • 1/2 small bell pepper (any color), finely chopped
  • 2 scallions, chopped
  • 1 jalapeno pepper, seeded and finely chopped
  • 1 clove garlic, chopped
  • 1 tablespoon fresh lime juice
  • kosher salt

Directions

  1. In a large bowl, combine the avocados, tomatoes, cilantro, bell pepper, scallions, jalapeño, garlic, lime juice, and 1/2 teaspoon salt.
  2. Mix, mashing as desired, until combined.

Quick Tip

There are no rules with guacamole. Mix in whatever you have on hand - corn, radishes, and so on.
