Makes 6 servings

2 ripe avocados, peeled and pitted
1 cup fresh store-bought salsa (not jarred), drained
1 1/2 tablespoons lime juice

Place the avocados in a large bowl and mash them slightly with the back of a fork. Add the salsa and lime juice and stir gently. Serve immediately.

Hands-On Time: 10 minutes
Total Time: 30 minutes
If Made From Scratch: 3 hours plus overnight soaking
Makes 4 servings

1 teaspoon olive oil
1 cup fresh store-bought (not jarred) salsa, plus extra for garnish
1 15-ounce can refried black beans
1 15-ounce can black beans, drained
1 14.5-ounce can low-sodium chicken or vegetable broth
1/2 cup sour cream (optional)
1 tablespoon finely chopped fresh cilantro (optional)

Heat the oil in a medium pot over medium heat. Add the salsa and cook, stirring occasionally, for 4 minutes. Add the refried and whole beans and combine. Add the broth, bring to a simmer, and cook for 5 minutes. Ladle into bowls and, if desired, top with the sour cream, cilantro, and additional salsa.
