“When they’re made into French fries, potatoes are just fat and salt,” says John Schmid of the Muddy River Farm in Goshen, New York. “But when you bake them, the outside becomes crisp, the inside is soft, and you can actually taste the potato.” Add salmon fillets to the oven during the last minutes of cooking and you’ll have a full meal.
