    Buying, Storing and Preparing Baby Lettuces

    How to Choose: Be sure the leaves of baby specimens are whole and unbroken, with no signs of wilting or browning. For optimal flavor, select a mix of several varieties. Avoid looseleaf lettuces that appear wet; the tender shoots decay quickly when moist.

    How to Store: Keep unwashed greens in a plastic bag in the vegetable drawer of the refrigerator. Don’t place them near apples or pears, which give off ethylene gas and quickly turn lettuce brown.

    Shelf Life: These delicate leaves should be used as soon as possible but can last for up to 4 days. With packaged baby lettuce, it’s essential to follow the expiration date, no matter how fresh the leaves appear, since bacteria can develop. (Most packaged leaves have a 2-week shelf life, but the time can vary, depending on the grower.)

    Best Uses: Wash and dry thoroughly just before using. (Avoid soaking leaves for long or they will become too soft, and any lingering moisture will repel dressings.) Do not break or cut the leaves; the bite-size morsels are perfect for salads as they are. Simply dress them with extra-virgin olive oil, salt, and pepper to let their flavor shine.
