  • Tomatoes are ready to pick when they are firm and evenly colored. To avoid any bruising or squashing, softly cup the tomato and twist it off the vine rather than pulling it. Green tomatoes still growing at season’s end can be plucked and ripened off the vine; store them for a few days in a brown paper bag in a cupboard or another cool, dark place.

  • Tomatoes stay more flavorful if kept at room temperature, so park them on a countertop, not in the refrigerator.
