STEP 1: Remove the legs and claws. Set them aside.
STEP 2: Lift the apron to detach the top shell. Toss it.
STEP 3: Turn the crab over; clean away the gills with your fingers
or a small knife.
STEP 4: Snap the crab in half to expose the meat. With a knife and
mallet, crack the legs and claws.
