People who have a hard time digesting cheese because it is so rich
should give goat cheese a try. Ounce for ounce, cheese made from goat's
milk packs about the same protein, vitamins, and, yes, fat as cow's milk
cheese (and offers slightly more calcium). But since goat's milk
contains smaller fat globules than cow's (the smaller the animal, the
smaller the fat blobs), the resulting cheese is easier for the digestive
system to absorb. If you're lactose intolerant, the news gets even
better: Goat cheese is naturally low in lactose, thanks to lactic acid
bacteria cultures used in the cheese-making process that consume the
hard-to-stomach milk sugar, leaving a nearly lactose-free finished
product.
