Apple varieties tend to be regional. In the West, for example,
Gravenstein is one of the most popular apples. In the East, you'll find
Northern Spy and Macoun. No matter where you are, when it comes to
buying apples, the best bet is always the farmers' market (go organic if
you're leaving the peel on, since pesticides can collect in the skin).
Gala, Fuji, Braeburn, Empire, Golden Delicious, Jonathan, Jonagold, and
Jonamac are other good apples to look for.
