Corby Kummer, author of The Joy of Coffee ($16, www.amazon.com), preps a new maker for brewing with three easy steps:

1. Pull the appliance out of the box and rinse all the removable parts with cool water — no soap.

2. Brew two blind (water only) cycles to flush any metallic or plastic taste out of the pipes. This also helps clear out any residue in the tubes and the water chamber.

3. Brew one full pot of coffee and throw it out. (If you don't want to waste your precious Peet's, buy a single-serve packet of mediocre but fresh coffee at the supermarket.) This will season the carafe so your first pot tastes like coffee instead of glass.
