    Beans made from scratch have the best flavor and texture, but the cooking can take hours. Canned beans, are a solid alternative, as long as you rinse and drain them well. If you do start from scratch, soaking the beans for a few hours before cooking is not necessary but will cut the cooking time. And remember to keep to a simmer — boiling beans can burst their skins.
