Most hams you find in supermarkets are cured or smoked (or both). A fresh ham, however, is essentially raw pork. It usually weighs about eight pounds and is festive and great for crowds, but it takes several hours to roast. As a shortcut, start with a ready-to-heat ham. You'll have dinner on the table in less than an hour.
