    1. Using a paring knife, slice the flesh of the jalapeno into four "fillets." Most of the heat is in the membrane that holds the seeds.

    2. Only the core remains, with the seeds attached. (If you want extra heat, save and chop some of the core.)

    3. Slice the jalapeno fillets into strips, then crosswise into a fine dice.
