  • Choose scallions with crisp green tops and firm white bases. Store them in the refrigerator's crisper, loosely wrapped in a plastic bag, for up to 1 week.
  • Scallions have a milder flavor than onions. Chopped, they can substitute for onions in salsa or guacamole.
  • Scallions can be cooked whole as a side dish. Place in a roasting pan, cover with chicken broth, and braise in a 400º F oven until tender, 15 to 20 minutes.
