Choose dill that is bright green and has a clean, fresh scent.
Avoid any with brown spots and wilted stems or leaves.Use dill soon after purchasing it. To keep it fresh for as long
as possible (3 to 5 days), store it stem-side down in a jar of
fresh water, tightly covered with a plastic bag. If the leaves
wilt, revive the sprigs by plunging them in an ice-water bath for a
few minutes.Add dill to salads, soups, and sauces. Fresh dill quickly loses
its fragrance during heating, so add it toward the end of the
cooking time.
