Once opened, mayonnaise should be refrigerated. Commercial
mayonnaise can be stored for up to 3 months, but if you make your
own, use it within 5 days.
Mayonnaise is more than just a sandwich spread: It makes a great
base for dips and sauces. Stir in chopped pickles, minced capers,
and chopped onion for tartar sauce. Or combine mayo with plain
yogurt, lemon juice, and chopped fresh parsley for a tasty
vegetable dip.
