This hand-operated slicer will help you do twice the work in half the time. You'll find it especially useful when you're prepping to entertain a large group. Professional chefs use sturdy stainless-steel mandolines, but for the home cook this plastic version works just as well. It has three interchangeable inserts that slide easily in and out. You'll find you can slice, shred, or julienne (cut into matchsticks) fruits and vegetables with far greater precision and finesse than with a food processor.

TO USE: With the insert in place, hold the fruit or vegetable firmly and pass it across the blade. The cuts will pile up quickly under the mandoline. One note of caution: Use the finger guard as you get closer to the blade. It will help hold the food steady as well as protect your fingers. The mandoline pictured here stores as one compact unit, so it's nearly impossible to lose any of the parts. It's also dishwasher-safe for easy cleanup. V-Slicer mandoline, $40, www.surlatable.com.
