A standard heavy-duty aluminum pan is the strongest choice. Look
for a loaf pan with 3-inch-high sides with extended edges for easy
handling. A darker nonstick finish is a fine choice, too, since
corn bread and other quick breads benefit from a deep, golden
crust. The pans are also great for terrines. Real Simple pick:
Gobel 9 1/2-by-3-inch loaf pan, $18, Zabar's, 800-697-6301 or
212-496-1234.
