    If all you're serving is cheese, for a course or at a party, Peter Kindel of the New York City restaurant Artisanal suggests five to seven cheeses. For a pre- or post-dinner course, he says three cheeses should do it. Plan for 1 to 1 1/2 ounces per cheese per person.
