    Choosing corn
    Choose ears that are firm and heavy and have snug, bright green husks. The kernels should be plump and the rows tight. The silks should be moist and thick. Don't buy corn that has been shucked: It loses much of its flavor once the husk is removed. Store corn, unshucked, in the refrigerator in plastic bags. Eat it as soon as possible.
