Two common varieties are clover and orange blossom. The darker the
color, the stronger the flavor.
Experiment with a different kind, such as lavender (available at
gourmet stores). Try it in salad dressings, on yogurt, or in baked
goods, like banana bread and oatmeal cookies.
For easy scooping, run a spoon under hot water (don't dry it) or
coat it with cooking spray. The honey will slide off easily.
