    Fresh ginger, or gingerroot, adds a spicy, peppery flavor to any dish. Use it in marinades or in steaming liquids. Use a vegetable peeler to remove the tough skin. Keep unpeeled ginger in a sealed plastic bag in the refrigerator for up to 3 weeks, or freeze it for up to 6 months. Dried ground ginger should not be substituted for fresh.
