THE WINNER:
OPEN PIT ORIGINAL BARBECUE SAUCE, $1.70
At first we were dubious of this slightly thin, orange-tinted
sauce, which didn't seem to have the heft we wanted. But in a blind
taste test, in which we coated pulled pork with eight of the most
widely available brands, then warmed it gently for 15 minutes, Open
Pit had a distinctive vinegary, tangy flavor and a fine balance
between spicy heat and subtle peppery notes. It enhanced the meat
rather than overpowering it with a thick, sweet coating.
ESPECIALLY GOOD FOR: Pulled pork and pork ribs, and for basting
chicken wings.
RUNNER-UP:
KC MASTERPIECE ORIGINAL, $2
We found its smoky-sweet flavor and signature thick texture
irresistible (turn the bottle upside down for optimal results).
ESPECIALLY GOOD FOR: Large beef ribs and grilled burgers.
