  • Don't buy seasoned or "stewed" tomatoes with herbs and vegetables added; they're less versatile. Who wants basil in guacamole? Instead, buy plain tomatoes and season with fresh herbs.

  • Cook canned tomatoes thoroughly when you're making a sauce. Even though they are precooked, simmering for 10 minutes brings out their natural sweetness and rids them of acidity.

  • On average, a 28-ounce can of whole tomatoes contains 15 tomatoes and 11 ounces of liquid. Use the juice, especially if you've splurged on high-quality tomatoes. It's full of flavor.
