Instead of using typical sweeteners like brown sugar or maple syrup, we start with apricot preserves to add some fruitiness. Combine with crushed fennel seeds, coriander seeds, and black peppercorns, then brush on the ham a couple times while it bakes. The apricot mixture will create a shiny, sticky glaze that’s sweet and spicy. When the ham is heated through, slice and serve with leftover spiced apricot glaze on the side.
