Spinach Salad

  • 1 tablespoon balsamic vinegar
  • 3 tablespoons olive oil
  • 1 teaspoon light brown sugar
  • 2 tablespoons lemon juice
  • kosher salt
  • 5 cups fresh spinach
  • 1/3 cup pecans, chopped
  • 2 ounces goat cheese, crumbled


  1. In a large bowl, whisk together the vinegar, oil, sugar, lemon juice, and 1/4 teaspoon salt. Add the spinach to the bowl and toss well. Divide among 4 plates. Top each serving with some of the nuts and cheese.
