1Remove the needles or leaves
Holding a sprig of thyme or rosemary at its top, slide your fingers down it, to the bottom, to strip off the leaves or needles.
Tip: Try to chop only what you need; herbs will last longer intact.

2Bundle the needles and slice across
Thyme leaves are usually small enough to use without chopping. To chop rosemary needles, bundle them together and slice until you reach the desired fineness. Store any leftover herbs in a plastic bag that can be sealed.
