Spinach, Shrimp, and Avocado Salad
This satisfying, super fresh salad more than qualifies as a whole meal—and pickier eaters could happily dine on cooked shrimp, avocado, and a slice of bread or a few crackers. The salad itself comes together in 15 minutes: Simply whisk together a quick but flavorful dressing of lemon juice, olive oil, honey, capers, and salt and pepper before tossing the spinach, cooked shrimp, chopped plum tomatoes, and avocado with the vinaigrette. It’s dairy-free and gluten-free, and clocks a lean 313 calories per serving. Not that anybody’s counting.
