  • How to Choose Tofu
    Tofu is made from soy milk in a manner similar to cheese. It is often sold in blocks packed in water; it should smell slightly sweet. For maximum freshness, be sure to check the expiration date. Tofu is available in different consistencies; your choice will depend on your taste and the purpose for which you’re buying it. Soft tofu is best for crumbling or adding to soups. Extra-firm and firm tofu have a chewy texture and hold together well for stir-frying, grilling, or cooking. Silken tofu has a smoother, creamier consistency that works well in desserts.

  • How to Store Tofu
    Refrigerate blocks sold in sealed containers in the original packaging and use by the expiration date. Aseptically sealed, vacuum-packed tofu can be kept at room temperature for up to 8 months. Some Asian markets sell tofu in bulk in large containers of water. At home, cover with fresh water, refrigerate, and use within a week.
