An A to Z guide to choosing, storing, preparing, and cooking fresh produce and recipe ingredients.

  • How to Choose Shallots
Shallots grow in bulbs composed of multiple cloves. Their color ranges from coppery brown to purplish rose; the white interior is usually subtly tinged with green or purple. Choose firm, round specimens with dry skin. Avoid any bulbs that have started to sprout or have dark or soft spots.

  • How to Store Shallots
Keep in a dry, well-ventilated space for up to 1 month. Do not store in a plastic bag, which traps moisture and can cause them to rot.

  • How to Use Shallots
Mild enough to be eaten raw, shallots can be diced and added to vinaigrette dressings. They can also be substituted for onions in almost any dish.
